Alex and Sam have been mates since day one of university but hadn't seen each other for the best part of 10 years. They reconnected during lockdown and began experimenting with fermented foods. It quickly became an obsession as the number of questionable looking condiments in glass jars multiplied on their shelves. They were fermenting anything in sight - making hot sauce, sauerkraut, kimchi and drinks such as kvass, kefir and eventually, kombucha! Quite soon, all their other ferments took a back seat as they became fixated on playing around with the flavours and fizz of fermented tea. After 18 months of experimentation, some exploding bottles and failed attempts at scaling up the brewing process, in November 2023 they launched their own brand - Scoby's.
Our kombucha is made in East Anglia at Humber Doucy Brewing Company with the help of our good friend, Johnny the Brewer. We ferment our starter culture for 6 weeks to ensure our SCOBY is full of those gut boosting bacteria and yeasts before combining our natural flavours. We see our product as being an accessible alternative for those looking to avoid booze and sugary soft drinks.
